This is a recipe for a guilt-free, low-carb chocolate pudding. Simply mix and chill to enjoy a smooth and rich chocolate pudding that's perfect for satisfying your sweet cravings, even while on a diet.

Ingredients

Main Ingredients (A few servings)

  • Unsweetened Soy Milk 400ml
  • Egg Yolks 2
  • Gelatin Powder 10g
  • Water 50ml

Seasonings

  • Cocoa Powder 4 tbsp
  • Lakanto S (Sweetener) 4 tbsp

Steps

  1. In a bowl, add 10g of Gelatin Powder and 50ml of Water. Mix well and let it bloom.
  2. In a separate bowl, add 2 Egg Yolks and whisk them. Add 4 tbsp of Lakanto S (Sweetener) and mix quickly until it becomes thick and creamy.
  3. Add about 130ml (1/3) of the 400ml Unsweetened Soy Milk and mix well. Sift in 4 tbsp of Cocoa Powder and mix thoroughly.
  4. Add the remaining soy milk in two additions, mixing well each time. Transfer to a pot and heat over medium heat. Once the edges of the pot start to simmer just before boiling, remove from heat.
  5. Add the bloomed gelatin and stir until it dissolves completely. Strain the pudding mixture through a sieve and pour into serving cups.
  6. Chill in the refrigerator for 3 to 5 hours until fully set.
