A healthy chicken tender and vermicelli salad that's incredibly easy to make in the microwave. Simply mix everything together for a dish perfect for combating summer fatigue. It's also great for bento boxes and meal prep, with a refreshing and easy-to-eat flavor.

Ingredients

Main Ingredients (3-4 servings)

  • Vermicelli Noodles 60g
  • Chicken Tenders 3 pcs
  • Cucumber 1 pc
  • Imitation Crab Sticks 5 pcs

Seasonings

  • Soy Sauce 2 tbsp
  • Vinegar 2 tbsp
  • Sugar 1/2 tbsp
  • Cooking Sake (Rice Wine) 1 tbsp
  • Chicken Stock Powder 1 tsp
  • White Sesame Seeds 1 tbsp
  • Sesame Oil 2 tsp
  • Pepper (to taste)

Steps

  1. Trim any sinew from the 3 chicken tenders if desired. Arrange the 3 chicken tenders in a microwave-safe dish, drizzle with 1 tbsp Cooking Sake (Rice Wine), and coat evenly. Cover with plastic wrap and microwave on 600W for 1 minute 30 seconds. 【Tip!】 Adding sake helps remove any gaminess from the chicken and results in a moist texture.
  2. Remove from the microwave, flip the chicken tenders over, and re-cover with plastic wrap, creating a small vent for steam to escape. Microwave on 600W for 1 minute and let cool slightly. 【Tip!】 Flipping and reheating helps ensure even cooking. If any pink remains, microwave for another 30 seconds.
  3. Place 60g vermicelli noodles in a heatproof bowl. Add enough water to completely submerge the noodles. Cover with plastic wrap, creating a small vent.
  4. Microwave on 600W for 5 minutes. After heating, check if the vermicelli noodles are tender. If they are still firm, add more cooking time.
  5. Cut off both ends of the 1 cucumber. Cut off about 1.5cm from the end where the stem was attached. Rub the cut surfaces together to remove bitterness. 【Tip!】 Removing the bitterness makes the cucumber even more delicious.
  6. After rinsing off the bitterness, wash the cucumber under running water and pat it dry. Slice it diagonally, then cut into thin julienne strips about 5mm wide.
  7. Place the julienned cucumber on paper towels, cover with more paper towels, and gently press to absorb excess moisture. Keep the cucumber sandwiched between paper towels until ready to use. 【Tip!】 Cucumbers release a lot of water, so it's important to dry them thoroughly.
  8. Remove the plastic packaging from the 5 imitation crab sticks and shred them with your hands.
  9. Drain the hot vermicelli noodles thoroughly and return them to the bowl. While still hot, add 1 tsp Chicken Stock Powder and 1/2 tbsp Sugar and mix well to dissolve. 【Tip!】 Chicken stock powder dissolves best when added to hot ingredients, so add it while the noodles are piping hot.
  10. Once the chicken tenders have cooled slightly, shred them into bite-sized pieces by hand.
  11. In a large bowl, combine the shredded chicken tenders, shredded imitation crab sticks, the dried julienned cucumber, and the seasoned vermicelli noodles.
  12. Add 2 tbsp Soy Sauce, 2 tbsp Vinegar, 2 tsp Sesame Oil, pepper (to taste), and 1 tbsp White Sesame Seeds to the bowl. Toss everything together thoroughly.
  13. Serve immediately, or chill in the refrigerator before serving.
