This 'Crispy Potato and Sausage Stuffed Bell Peppers' recipe is a simple and budget-friendly dish where bell peppers are stuffed with mashed potatoes, sausages, and cheese, then baked to perfection. Ingredients

Main Ingredients (2 servings)

  • Bell peppers 4 pieces
  • Potato 1 piece (approx. 150g)
  • Sausages 2 pieces
  • Mixed cheese 30g
  • Potato Starch (to coat)

Seasonings

  • [A] Salt (to taste)
  • [A] Coarse black pepper (to taste)

Steps

  1. Peel and remove any eyes from the potato (approx. 150g).
  2. Cut the potato into roughly 8 equal pieces and place in a microwave-safe container.
  3. Heat in the microwave at 600W for 3.5 minutes until the potato is tender.
  4. After heating, mash the potato with a fork or masher.
  5. Cut the 4 bell peppers in half lengthwise, and remove the stems, seeds, and membranes.
  6. Lightly dust the inside of the bell peppers with Potato Starch (to coat).
  7. Cut the 2 sausages in half lengthwise, and then cut each half into further halves.
  8. Finely chop the sausages into about 5mm pieces.
  9. Add the chopped sausages, salt (to taste), coarse black pepper (to taste), and mixed cheese 30g to the bowl with the mashed potato and mix well. (Key Tip!) If the mixture is too crumbly due to the potato's moisture content, gradually add a little water to adjust consistency.
  10. Stuff the prepared mixture into the hollows of the bell peppers that were dusted with potato starch.
  11. Press down with a spatula or chopsticks to fill the cavities completely. (Key Tip!) Dusting the inside of the bell peppers with potato starch prevents the filling from falling out during cooking.
  12. Heat a frying pan with a little oil over medium heat.
  13. Once the pan is hot, place the stuffed bell peppers cut-side down.
  14. Grill until a golden-brown crust forms. (Key Tip!) Searing the cut side first allows the cheese to melt and develop a wonderful aroma.
  15. Once browned, flip the bell peppers over.
  16. Continue to cook until the other side is browned and the bell peppers are tender. (Key Tip!) Cooking both sides ensures the bell peppers are fully cooked.
  17. Once both sides are golden brown and cooked through, remove from the pan and serve.
