Ingredients

Main Ingredients (2-3 servings)

  • Burdock root 1 (approx. 150g)
  • Carrot 50g

Seasonings

  • [A] Cooking Sake (Rice Wine) 1 tbsp
  • [A] Mirin (Sweet Rice Wine) 1 tbsp
  • [A] Honey 1 tsp
  • [B] Dashi powder 1/2 tsp
  • [B] Soy Sauce 1 tbsp
  • [B] White Sesame Seeds 1 tbsp
  • Sesame Oil 1 tsp
  • Vegetable Oil 1/2 tbsp

Steps

  1. Wash the burdock root (150g) thoroughly to remove all dirt.
  2. Use the back of a knife or a crumpled piece of aluminum foil to scrape off the skin of the burdock root. 【Secret Tip!】 Over-peeling will reduce the flavor, so just scrape off the rough parts.
  3. Lightly rinse the peeled burdock root and pat it dry with paper towels.
  4. Trim off the dry ends of the burdock root.
  5. Slice the burdock root diagonally into pieces less than 5mm thick.
  6. Stack a few of the diagonally sliced burdock root pieces and thinly julienne them into strips less than 5mm wide.
  7. Place the julienned burdock root in a bowl of water and soak for about 5 minutes to remove bitterness. 【Secret Tip!】 Soaking prevents discoloration.
  8. Peel the carrot (50g).
  9. Slice the peeled carrot thinly lengthwise, then julienne into strips about 3mm wide.
  10. Drain the soaked burdock root in a colander and thoroughly pat dry with paper towels. 【Secret Tip!】 Excess moisture can cause oil splattering, so dry carefully.
  11. Heat Vegetable Oil (1/2 tbsp) in a frying pan over medium heat.
  12. Once the pan is hot, add the burdock root and carrot and stir-fry over medium heat for about 2.5 minutes until coated with oil. 【Secret Tip!】 Stir-fry until the burdock root and carrot are slightly softened.
  13. Add [A] Cooking Sake (Rice Wine) (1 tbsp), Mirin (Sweet Rice Wine) (1 tbsp), and Honey (1 tsp) to the stir-fried vegetables and cook for less than 1 minute, mixing well. 【Secret Tip!】 Adding sweeteners and sake before soy sauce helps the sweetness penetrate and allows the alcohol to evaporate more easily.
  14. Add [B] Dashi powder (1/2 tsp), Soy Sauce (1 tbsp), and White Sesame Seeds (1 tbsp) and stir-fry for less than 1 minute until combined.
  15. Finish by drizzling in Sesame Oil (1 tsp) and stir-frying briefly to incorporate. 【Secret Tip!】 Add Sesame Oil at the end and avoid overcooking to preserve its aroma.
  16. Once all the flavors are well combined, it's ready. Taste and adjust seasoning as needed.
  17. Transfer to a serving dish. Letting it cool slightly will allow the flavors to meld further.
