Ingredients
Main Ingredients (3-4 servings)
- Thinly sliced pork belly 300g
- Daikon radish 6cm
- Carrot 2/3
- Burdock root 2/3
- Konjac jelly 2/3
- Ginger 1/2 piece
- Garlic 2-3 cloves
Seasonings
- Japanese soup stock granules 2 tsp
- Miso 4 tbsp
- Sesame oil a little
- Vinegar (to taste)
Steps
- Soak burdock root (2/3) in vinegar water to remove bitterness.
- Tear konjac jelly (2/3) into pieces by hand and blanch in hot water to remove any astringency.
- Prepare ginger (1/2 piece) and garlic (2-3 cloves).
- Heat sesame oil (a little) in a pot. Add thinly sliced pork belly (300g), daikon radish (6cm), carrot (2/3), burdock root (2/3), konjac jelly (2/3), ginger, and garlic. Sauté slowly. 【Key Tip!】 Sauté slowly to bring out the umami from the vegetables.
- Add 800cc of water and Japanese soup stock granules (2 tsp). Simmer for 15 minutes.
- Carefully skim off any scum.
- Dissolve miso (4 tbsp) and stir in.
