No knife needed, ready in 10 minutes! This super simple umami-steamed dish is made with just pork belly and lettuce. The steam from the lettuce makes the pork juicy and the lettuce crisp. A delicious home-style dish by Kō Kentetsu that will have you eating endless bowls of rice.

- Pork Belly Slices 200g - 250g
- Lettuce 1 head
Seasonings
- [A] Grated Garlic 1 clove
- [A] Soy Sauce 1 tbsp
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [B] Soy Sauce 1 tbsp
- [B] Sesame Oil 1 tbsp
- [B] Toasted White Sesame Seeds 1 tbsp
- Salt (to taste)
- Shredded Chili Pepper (optional)
Steps
- Cut Pork Belly Slices in half with kitchen scissors and place in a frying pan. Loosen the pork slightly to prevent it from sticking together.
- Add Grated Garlic 1 clove, Soy Sauce 1 tbsp, and Cooking Sake (Rice Wine) 1 tbsp to the pork, and gently coat the meat with your hands.
- Firmly press down on the core of the lettuce, twist, and remove it cleanly. Rinse briefly and drain.
- Tear the drained Lettuce 1 head into bite-sized pieces and arrange them over the pork. Sprinkle lightly with Salt (to taste). **【Key Tip!】** Do not add any water; steam using the lettuce's own moisture. By lining the bottom with pork slices, you prevent the lettuce from becoming soggy and retain its crisp texture.
- Cover with a lid and steam over medium heat. Once it begins to boil vigorously, reduce the heat to low and steam for about 5 minutes over low-medium heat.
- Once the lettuce is wilted, turn off the heat. Prepare a large bowl and transfer the steamed pork and lettuce, draining off any excess liquid thoroughly. **【Key Tip!】** Be careful to drain well; otherwise, the dish will become watery.
- Add Soy Sauce 1 tbsp, Sesame Oil 1 tbsp, and Toasted White Sesame Seeds 1 tbsp to the steamed pork and lettuce, and toss gently to combine.
- Pile high on a serving plate and garnish with Shredded Chili Pepper (optional) if desired.
