From Koutentetsu's incredibly popular side dish series "These Go With Everything," comes a super simple recipe for Edamame Steamed in Umami Broth. It's easy to make in a frying pan, the flavor soaks deeply into the beans, and it's a superb snack that pairs perfectly with beer. Delicious hot or cold, it's a versatile dish for any occasion.

Ingredients

Main Ingredients (2 servings)

  • Edamame: 1 bag
  • Salt: (to taste)

Seasonings

  • [A] Soy Sauce 2 tbsp
  • [A] Mirin (Sweet Rice Wine) 3 tbsp
  • [A] Water 1/3 cup
  • [A] Bonito Flakes (Katsuobushi) 1 pinch
  • Shichimi Togarashi (Japanese Seven Spice) (to taste)

Steps

  1. Lightly wash 1 bag of edamame and rub with salt (to taste).
  2. Rinse the salt-rubbed edamame and drain.
  3. Cut off both ends of the edamame with kitchen scissors. This is the key! Cutting both ends allows the flavor to penetrate more easily.
  4. Add 2 tbsp soy sauce, 3 tbsp mirin (sweet rice wine), 1/3 cup water, and 1 pinch bonito flakes (katsuobushi) to a frying pan.
  5. Add the edamame to the frying pan and mix well with the seasonings.
  6. Cover the frying pan and steam.
  7. While covered, shake the frying pan to mix the edamame and allow the flavor to meld evenly.
  8. Remove the lid and turn off the heat.
  9. Arrange the edamame in a serving dish.
  10. Sprinkle with shichimi togarashi (Japanese seven spice) (to taste), if desired.
