From Koutentetsu's incredibly popular side dish series "These Go With Everything," comes a super simple recipe for Edamame Steamed in Umami Broth. It's easy to make in a frying pan, the flavor soaks deeply into the beans, and it's a superb snack that pairs perfectly with beer. Delicious hot or cold, it's a versatile dish for any occasion.
Ingredients
Main Ingredients (2 servings)
- Edamame: 1 bag
- Salt: (to taste)
Seasonings
- [A] Soy Sauce 2 tbsp
- [A] Mirin (Sweet Rice Wine) 3 tbsp
- [A] Water 1/3 cup
- [A] Bonito Flakes (Katsuobushi) 1 pinch
- Shichimi Togarashi (Japanese Seven Spice) (to taste)
Steps
- Lightly wash 1 bag of edamame and rub with salt (to taste).
- Rinse the salt-rubbed edamame and drain.
- Cut off both ends of the edamame with kitchen scissors. This is the key! Cutting both ends allows the flavor to penetrate more easily.
- Add 2 tbsp soy sauce, 3 tbsp mirin (sweet rice wine), 1/3 cup water, and 1 pinch bonito flakes (katsuobushi) to a frying pan.
- Add the edamame to the frying pan and mix well with the seasonings.
- Cover the frying pan and steam.
- While covered, shake the frying pan to mix the edamame and allow the flavor to meld evenly.
- Remove the lid and turn off the heat.
- Arrange the edamame in a serving dish.
- Sprinkle with shichimi togarashi (Japanese seven spice) (to taste), if desired.
