Ingredients

Main Ingredients (2 servings)

  • Lotus root: 2 small pieces (approx. 200g)

Seasonings

  • Olive oil: 2 tbsp
  • Minced garlic: 1 clove
  • Chopped red chili pepper: 1 piece
  • Salt: to taste
  • Soy sauce: to taste

Steps

  1. Peel the skin off the lotus root using a peeler.
  2. Cut the lotus root, placed vertically, into 4 lengthwise pieces.
  3. Roughly cut the sliced lotus root into 3 more baton shapes. (This is the key!) Cutting lengthwise brings out a crispier texture.
  4. Heat 2 tbsp of olive oil in a frying pan over high heat.
  5. Once the pan is sufficiently hot, add the baton-shaped lotus root and sear until browned. (This is the key!) Sear over high heat until browned to enhance the aroma. Be cautious of oil splattering due to the moisture.
  6. Once the lotus root is browned, add 1 clove of minced garlic, 1 chopped red chili pepper, and a pinch of salt, and toss quickly to coat everything.
  7. Finish by adding soy sauce to taste and tossing to adjust the flavor.
