  2. In a shallow dish, combine grated ginger (1 clove), grated garlic (1 clove), finely chopped scallion (5cm portion), soy sauce (2 tbsp), sugar (1 tbsp), cooking sake (rice wine) (1 tbsp), and toasted white sesame seeds (1 tbsp).
  3. Mix until the sugar is dissolved.
  4. Finish by adding sesame oil (1 tbsp) and mixing. Spread the sauce in the dish.
  5. Use 1 block (300g) of firm tofu. If it's a bit soft, lightly pat it dry with paper towels.
  6. Cut the tofu in half first, then into bite-sized pieces.
