Ingredients
Main Ingredients (1 serving)
- 1 Egg
- 1 slice Roasted Ham
- 1 serving Warm Cooked Rice
Seasonings
- 2-3 Scallions, finely chopped
- 1 tbsp Soy Sauce
- 1 tbsp Vinegar
- 1 tsp Sesame Oil
- Salt, to taste
- Vegetable Oil, for frying
Steps
- Finely chop 2-3 scallions.
- In a bowl, combine 1 tbsp soy sauce, 1 tbsp vinegar, 1 tsp sesame oil, and the chopped scallions. Mix well to create the sauce. This is the key to the perfect versatile sauce for the fluffy egg.
- Cut 1 slice of roasted ham into bite-sized pieces.
- In a bowl, combine 1 egg, the chopped ham, and a pinch of salt. Mix well. Thoroughly mixing is the secret to a fluffy egg.
- Add a generous amount of vegetable oil to a small frying pan and heat over high heat until very hot. The oil should be so hot that a small amount of egg poured in immediately solidifies.
- Pour the egg mixture into the hot pan in a fluffy motion and cook one side until golden brown. Do not touch the egg after pouring; cook on high heat for an extra fluffy result.
- Once the bottom is golden brown, flip it immediately and cook the other side. Don't worry if the shape breaks.
- Place the cooked fluffy egg on top of 1 serving of warm cooked rice. The egg should be voluminous enough to cover the rice.
- Drizzle with the prepared sauce to your liking.
