Steps

  1. Cut 4 broccoli florets into bite-sized pieces and place them in a heatproof container.
  2. Cover with plastic wrap and microwave.
  3. Thinly slice 1/4 onion.
  4. In a bowl, add 120g pork slices, grated ginger from 1 clove, 1 tbsp cooking sake, 1 tbsp soy sauce, 2 tsp sugar, and 1 tsp potato starch. Mix well by hand. Coating the pork with potato starch first prevents it from becoming tough and absorbs moisture, making it perfect for bento.
  5. Heat sesame oil (to taste) in a frying pan and stir-fry the thinly sliced onion until softened.
  6. Push the onion to the side of the pan and add more sesame oil (to taste).
  7. Spread the marinated pork in the frying pan, breaking it apart, and cook until browned.
  8. Fill your bento box with rice.
  9. Drain the microwaved broccoli.
  10. Place the broccoli in a bowl and toss with 1 tbsp mayonnaise and 1 tsp white sesame seeds.
  11. Arrange the cooked ginger pork over the rice. Using the onion as a cushion will keep the pork moist and enhance its sweetness.
  12. On the side, add the sesame mayo dressed broccoli and, if desired, pickled red ginger (to taste).
