Steps
- Wash the potato skins thoroughly, then make deep cross-shaped incisions without peeling.
- Place the potatoes in a microwave-safe dish, cover with plastic wrap, and microwave until tender. They should be tender enough for a toothpick to pierce easily.
- While still in the dish, mash the heated potatoes with a fork. This step is key! Mashing makes it easier for other ingredients and seasonings to blend in.
- Drizzle a pinch of salt and 2 tbsp olive oil over the mashed potatoes.
