Steps
- Wash the skin of 1 potato, wrap it entirely in plastic wrap, and microwave until cooked. (Secret Tip!) Using a May Queen potato makes peeling easier.
- Trim the ends of 30g onion and slice it very thinly for the potato salad.
- Finely chop the remaining onion for the meatballs.
- For the finely chopped onion, rinse it in water and squeeze out the moisture, or let it air out to remove its pungency.
- In a plastic bag, combine 120g ground chicken, the minced onion, a pinch of salt, and 1 tsp potato starch.
- Knead thoroughly through the bag to mix everything well. (Secret Tip!) This allows for hands-free preparation and saves time.
- Heat vegetable oil in a frying pan.
- Cut a corner off the plastic bag containing the meat mixture. Squeeze the meat mixture into the hot pan, and use kitchen shears to cut it into bite-sized meatballs. (Secret Tip!) Even if the shapes are irregular, the sauce will cling better. Smaller meatballs cook faster, saving time.
- Add 1 tbsp cooking sake (rice wine) over the meatballs and cover with a lid to steam. (Secret Tip!) This results in fluffy meatballs and speeds up cooking.
- Remove the cooked potato from the plastic wrap, place it in a bowl, and peel it while lightly mashing.
- Add 1/2 tsp white sugar, a pinch of salt, and 1 tbsp mayonnaise to the mashed potato, and mix well while continuing to mash. (Secret Tip!) Adding white sugar enhances richness and moisture, keeping the salad delicious even after some time.
- Add 2 tbsp whole corn and the thinly sliced onion to the potato salad and mix. (Secret Tip!) This is also recommended for make-ahead dishes.
- To the steamed meatballs, add [A] 2 tsp white sugar, [A] 2 tbsp tomato ketchup, [A] 1 tbsp soy sauce, and [A] 1 tsp vinegar. Mix quickly.
- Cook while tossing the meatballs and sauce to coat. (Secret Tip!) The white sugar adds richness, and the ketchup's acidity is mellowed.
- Once the sauce has thickened, pack rice for 1 person and frill lettuce into a bento box. Add the meatballs and potato salad.
- Pour the remaining sauce over the meatballs to finish. Done!
