  • 2 tbsp sesame oil (if the meat is lean)

Seasonings

  • 1 tsp salt

  • [A] 1 tbsp sake
  • [A] 1 tbsp oyster sauce
  • [A] 1 tsp sugar
  • [A] 1 tsp Chinese soup stock granules

Steps

  1. Finely chop 1/4 head cabbage.
  2. Add 1 tsp salt to the finely chopped cabbage, knead with salt, and let it sit.
  3. Finely chop 1 bunch chives, 3 stalks green onions, 2 cloves garlic, and 1 piece ginger respectively.
  4. Squeeze out the moisture from the salt-kneaded cabbage thoroughly. 【This is the key!】 Make sure to remove the water from the cabbage well.
  5. Place 400g ground pork in a bowl. Add 1/3 tsp white pepper, 1 tbsp soy sauce, 1 tbsp sake, 1 tbsp oyster sauce, 1 tsp sugar, 1 tsp Chinese soup stock granules, and 1 tbsp water. Mix well until sticky. 【This is the key!】 Mix the ground pork until it becomes sticky.
