Ingredients

Main Ingredients (2 servings)

  • Beef 300 grams
  • Onion 1
  • Rice to taste

Seasonings

  • [A] Water 500cc
  • [B] Dashi granules 1 tbsp
  • [C] Sake 6 tbsp
  • [C] Mirin 6 tbsp
  • [C] Soy sauce 6 tbsp
  • [C] Sugar 6 tbsp

Steps

  1. Peel the onion.
  2. Cut the onion into 2cm thick slices.
  3. Put 500cc of water in a pot.
  4. Add the cut onion (1) to the pot.
  5. Add 1 tbsp of dashi granules and simmer.
  6. Once the pot starts to simmer, add 6 tbsp of sake, 6 tbsp of mirin, 6 tbsp of soy sauce, and 6 tbsp of sugar in order.
  7. Taste and simmer until the onions are very tender. 【This is the key!】 Cutting the onions into large pieces allows them to retain their texture and be delicious even after simmering.
  8. Spread the beef (300g) over the simmered onions.
  9. Once the beef is lightly cooked, reduce heat to low and simmer for another 3 minutes. 【This is the key!】 Adjust simmering time based on the quality of the meat; for cheaper cuts, simmering for about 10 minutes will make them tender.
  10. Turn off the heat.
  11. Put rice (to taste) in a bowl and generously top with the simmered beef and onions.
  12. Garnish with pickled ginger if desired, and serve.
