Ingredients

Main Ingredients (1 serving)

  • Somen noodles 100g
  • Egg 1

Seasonings

  • Powdered dashi soy sauce 2/3 tsp
  • Shredded nori to taste
  • Green onions to taste
  • Shichimi pepper to taste
  • Sesame oil 2 tsp
  • Extra powdered dashi soy sauce to taste

Steps

  1. Bring water to a boil in a pot.
  2. Prepare a serving bowl.
  3. In the boiling water, boil 100g of somen noodles for 1 minute (or 50 seconds). 【Pro Tip!】 To serve them warm, cooking them quickly prevents the noodles from becoming overcooked and mushy.
  4. Drain the hot water from the cooked somen noodles and remove them from the pot.
  5. Pour hot water into the prepared bowl to warm it up.
  6. Discard the hot water from the warmed bowl, then place the boiled somen noodles into the bowl.
  7. Add 2/3 tsp of powdered dashi soy sauce to the somen noodles.
  8. Place 1 egg on top of the somen noodles, then gently mix while the dish is still warm to set the egg to a soft-boiled consistency. 【Pro Tip!】 Mix gently without whisking to achieve a creamy, soft-boiled egg.
  9. Garnish with shredded nori and green onions, if desired.
  10. Taste and add extra powdered dashi soy sauce, if desired.
  11. Drizzle with 2 tsp of sesame oil.
  12. Sprinkle with shichimi pepper.
