This is Ryuji's ultimate yaki onigiri recipe, perfected after years of research. With just a rice cooker and simple seasonings, anyone can recreate this astonishingly delicious flavor at home. The fragrant soy sauce and umami of bonito flakes make this dish irresistible.
Ingredients
Main Ingredients (Makes 4 pieces)
- Rice 750g
- Cooked Rice 400g
- Bonito Flakes Powder 4g
Seasonings
- [A] Sake 2 and 1/2 tbsp
- [A] MSG 3 dashes
- [B] Soy Sauce 2 tbsp
- [B] Sugar 1 tsp
- [B] MSG 4 dashes
Steps
- Rinse 750g rice, draining the water, repeat twice.
- Put the rinsed rice into a rice cooker, add 2 and 1/2 tbsp sake, 3 dashes MSG, and add water up to the 5-go mark.
- Place the entire rice cooker in the refrigerator and let the rice soak for 1 hour.
- Cook the soaked rice using the quick cook mode.
- Place the cooked 400g rice into a bowl, add 4g bonito flakes powder, 2 tbsp soy sauce, 1 tsp sugar, and 4 dashes MSG, then mix well.
- Divide the mixed rice into 4 equal portions, shape them into onigiri, and pan-fry both sides until fragrant and nicely browned.
- The yaki onigiri is complete.
