This is the ultimate donburi recipe, featuring a whole fresh onion grilled like a steak and served over rice. The fragrant, melt-in-your-mouth fresh onion, pan-fried in butter, combined with the savory umami of 'Kore! Uma!! Tsuyu' sauce, creates an exquisite harmony with the rice. Ingredients

Main Ingredients (1 serving)

  • Fresh Onion 1 (180g)
  • Cooked Rice 200g
  • Nori (seaweed) to taste
  • Bonito Flakes to taste
  • Chopped Scallions to taste

Seasonings

  • Salt and Pepper to taste
  • Butter 10g
  • Kore! Uma!! Tsuyu 1 tbsp
  • Black Pepper to taste

Steps

  1. Prepare the fresh onion. Peel 1 fresh onion and trim both ends.
  2. Slice the fresh onion into 1cm thick rings.
  3. Heat a frying pan over medium heat with 10g butter. Once melted, arrange the sliced fresh onion in the pan.
  4. Season both sides of the fresh onion with salt and pepper to taste.
  5. Reduce heat to low-medium, cover, and gently steam-fry the fresh onion. 【Chef's Tip!】 High heat can easily burn the onion, so cook it slowly over low-medium heat with a lid to achieve a tender, melt-in-your-mouth texture.
  6. Once one side is browned, flip it over and brown the other side.
  7. Remove the lid and continue cooking the fresh onion to get more charring.
  8. Once well browned, add 1 tbsp Kore! Uma!! Tsuyu and toss to coat the fresh onion, allowing it to absorb the sauce.
  9. Place 200g cooked rice in a bowl, then generously top with nori to taste and bonito flakes to taste.
  10. Place the grilled fresh onion coated in Kore! Uma!! Tsuyu on top of the rice.
  11. Finally, sprinkle with chopped scallions to taste and a dash of black pepper to taste.
