  • Lettuce 1/4 head
  • Long green onion 1/3 stalk (40g)

  • Crab sticks 50g

  • Ground pork 120g
  • Garlic 5g
  • Ginger 5g
  • Silken tofu 300g
  • Long green onion 40g
  • Potato starch 2 tsp

Seasonings

  • Chinese seasoning 1 1/2 tsp
  • Soy sauce 1 tsp
  • Sake 1 tsp
  • Sesame oil 1 tsp
  • Vinegar 2 tsp
  • Chili oil to taste
  • Scallions to taste
  • Black pepper to taste
  • Lard 1 tbsp
  • Mayonnaise 1/2 tbsp
  • Fish sauce 1 tbsp
  • Oyster sauce 1 tsp
  • Aji-no-moto (MSG) 6 dashes
  • Salt 1 pinch
  • Black pepper to taste
  • Five-spice powder 1 dash
  • Sake 1 tbsp
  • Sesame oil 2 tsp
  • Soy sauce 1 tbsp
  • Chicken stock 1 and 1/3 tsp

Steps

  1. For Mapo Tofu, heat oil in a frying pan and stir-fry ground pork 120g.
  2. Season the stir-fried ground pork with pepper.
  3. Finely chop long green onions for each dish.
  4. Crush and finely chop garlic 5g and ginger 5g.
  5. Add the chopped garlic and ginger to the stir-fried ground pork and cook until fragrant.
  6. Add 200cc of water and bring to a boil.
  7. Cut silken tofu 300g into cubes and add to the pot.
  8. Add soy sauce 1 tbsp, chicken stock 1 and 1/3 tsp, and pepper, and let the tofu absorb the flavor.
  9. Add chopped long green onion 40g for the Mapo Tofu.
  10. Dissolve potato starch 2 tsp in sake 1 1/2 tbsp to make a slurry.
  11. Pour the slurry into the Mapo Tofu and mix until it thickens.
  12. Finish by drizzling with sesame oil to complete the Mapo Tofu.
  13. For Crab Fried Rice, crush and shred crab sticks 50g with a rolling pin.
  14. Heat cooked rice 200g in the microwave.
  15. Whisk eggs 2 for the Crab Fried Rice.
  16. In a separate frying pan, heat lard 1 tbsp and mayonnaise 1/2 tbsp, then stir-fry the shredded crab sticks.
  17. Add the heated rice, whisked eggs, and chopped long green onion 35g, and stir-fry well.
  18. Add fish sauce 1 tbsp, oyster sauce 1 tsp, Aji-no-moto (MSG) 6 dashes, salt 1 pinch, black pepper, and five-spice powder 1 dash, and stir-fry everything together.
  19. Finally, add sake 1 tbsp and stir-fry over high heat, tossing constantly, to complete the Crab Fried Rice.
  20. For Sour and Spicy Soup, tear lettuce 1/4 head into pieces.
  21. Bring 250cc of water to a boil in a pot, then add the torn lettuce and chopped long green onion 1/3 stalk (40g).
  22. Add Chinese seasoning 1 1/2 tsp, soy sauce 1 tsp, sake 1 tsp, and sesame oil 1 tsp, and bring to a boil.
  23. Turn off the heat and slowly drizzle in whisked egg 1.
  24. Add vinegar 2 tsp and mix.
  25. Finish with chili oil, scallions, and black pepper to complete the Lettuce Sour and Spicy Soup.
