A super delicious and endlessly edible enoki mushroom meal prep recipe that's cheap, healthy, and easy to prepare! The double broth of chicken stock and Hondashi creates a deep umami flavor. This addictive pepper pickle pairs perfectly with drinks or as a side for rice. You have to try it!
Ingredients

- Enoki mushrooms 400g
- Scallions to taste
Seasonings
- Grated garlic 10g
- Chicken stock 1 and 1/3 tsp
- Sesame oil 4 tsp
- Hondashi 2/3 tsp
- Black pepper to taste
- Vinegar 2 tsp
Steps
- Trim off the very bottom of the enoki mushrooms.
- Carefully tear the trimmed enoki mushrooms apart and place them into a heatproof container.
- Grate garlic (10g) and add it to the enoki mushrooms in the heatproof container.
- Heat the enoki mushrooms and grated garlic in a 600W microwave for 4 minutes. 【Chef's Tip!】 The garlic may turn green when microwaved, but this does not affect its quality.
- To the heated enoki mushrooms, add chicken stock 1 and 1/3 tsp, sesame oil 4 tsp, Hondashi 2/3 tsp, and vinegar 2 tsp, then mix well.
- Generously sprinkle in black pepper to taste and mix to combine evenly.
- Finally, sprinkle with scallions to taste and it's done!
