A spicy chili sauce using crab sticks and macaroni. It feels like the shrimp in Ebi Chili has been replaced with macaroni. With salted koji and mayonnaise as secret ingredients, this dish is easy to make and very satisfying. The perfect balance of sweet and savory, the chewiness of the macaroni, the spiciness of the chili bean paste, and the tanginess, all come together to create authentic Chinese flavors in just 13 minutes.
Ingredients
Main Ingredients (2 servings)
- Macaroni 100g
- Crab Sticks 1 pack
- Green Onion (minced) 2 tbsp
- Ginger (minced) 2 tsp
- Garlic (minced) 2 tsp
- Grated Cheese (optional)
Seasonings
- Taihaku Sesame Oil 1 tbsp
- Doubanjiang (Chili Bean Paste) 1/2 tsp
- Salted Koji 1 tsp
- Cooking Sake (Rice Wine) 1 tbsp
- Chicken Stock 90-100ml
- Sugar 2 tbsp
- Salt (to taste)
- Soy Sauce 2 1/2 tbsp
- Ketchup 2 1/2 tbsp
- Mayonnaise 3 tbsp+
- Sichuan Pepper Powder (optional)
Steps
- Bring a pot of water to a boil and cook 100g of Macaroni according to package directions for about 9 minutes.
- Drain the cooked macaroni in a colander.
- Heat 1 tbsp of Taihaku Sesame Oil in a frying pan over medium heat.
- Add 2 tsp of minced Garlic and 2 tsp of minced Ginger and sauté until fragrant.
- Add 1/2 tsp of Doubanjiang (Chili Bean Paste) and stir-fry with the garlic and ginger until fragrant.
- Add 2 tbsp of minced Green Onion and mix well.
- Add 1 tsp of Salted Koji and mix everything together. (This is the key!) Salted koji adds richness.
- Add 1 pack of Crab Sticks and lightly stir-fry.
- Add 1 tbsp of Cooking Sake (Rice Wine) and mix.
- Add 90-100ml of Chicken Stock (about 6 tbsp).
- Add 2 tbsp of Sugar.
- Add Salt to taste.
- Add 2 1/2 tbsp of Ketchup and mix.
- Lightly simmer the sauce.
- Taste and adjust seasoning if necessary with a little more sugar (not included in the listed amount).
- Add the cooked macaroni and simmer until well coated with the sauce.
- Just before turning off the heat, add 3 tbsp+ of Mayonnaise and mix well.
- Transfer to a serving dish.
- Sprinkle with Grated Cheese as desired.
- Sprinkle with Sichuan Pepper Powder as desired, and it's ready to serve.
