Ingredients

Main Ingredients (2 servings)

  • Corn 1 ear
  • Sakura Shrimp (dried) 5-10g

Seasonings

  • Vegetable Oil or Olive Oil 1 tbsp
  • Soy Sauce 1 tsp
  • Mirin (Sweet Rice Wine) 1 tsp

Steps

  1. Cut 1 ear of corn into approximately 5 rings.
  2. Make a cut along the core of the corn rings with a knife, then snap it in half.
  3. Use the handle of a measuring spoon to scrape away some of the corn kernels to create an opening.
  4. Use a knife to cut off one row of corn kernels, then rotate and scrape off the remaining kernels cleanly. [This is the trick!] This method removes hard parts and leaves the kernels intact.
  5. Heat 1 tbsp of Vegetable Oil or Olive Oil in a frying pan.
  6. Add the scraped corn kernels to the heated frying pan and stir-fry until lightly browned.
  7. Add 5-10g of Sakura Shrimp to the stir-frying corn and sauté briefly.
  8. Add 1 tsp of Soy Sauce and 1 tsp of Mirin (Sweet Rice Wine) and toss to coat.
  9. Turn off the heat once the flavors have melded and serve. Enjoy!
