From nostalgic stories of my chef training days, I'll show you how to make a rich fried rice using lard. You'll be surprised how much the oil's flavor changes when you use camellia lard or pure lard. Add more umami with a granulated soup base. Enjoy a hearty, rich flavor once in a while.
Ingredients
Main Ingredients (1 serving)
- Cooked Rice 250g
- Egg 1 pc
- Narutomaki (Fish Cake) 30g
- Ham 30g
- Green Onion 30g
- Scallions (Green Onions) to taste
Seasonings
- Lard 2 tbsp
- Salt to taste
- Pepper to taste
- Soy Sauce 1 tsp
- Granulated Chicken Stock Powder to taste
Steps
- Whisk 1 egg.
- Mix 1 tbsp of lard into 250g of warm cooked rice. [The Key!] Mixing lard thoroughly into freshly cooked rice creates a traditional rich flavor.
- Melt the remaining 1 tbsp of lard in a frying pan.
- Add the whisked 1 egg to the melted lard. Once the egg sizzles, add the lard-mixed rice and flip immediately.
- Stir-fry over low to medium heat, ensuring the egg is evenly mixed into the rice.
- Once the egg and rice are combined, add 30g of roughly chopped narutomaki (fish cake) and 30g of roughly chopped ham.
- Sprinkle in a pinch of salt and a pinch of pepper.
- Make a small well in the center of the pan, drizzle in 1 tsp of soy sauce, and stir-fry until fragrant.
- Increase heat and stir-fry. Add 30g of sliced green onion and toss to combine. [The Key!] If tossing is difficult, stir roughly with a spatula.
- Finish by scattering chopped scallions to taste over the top. It's ready!
