  • Spaghetti 160g
  • Bacon 70g
  • Shiitake Mushrooms 90g
  • Tuna 1-2 cans

Seasonings

  • Garlic 1 clove
  • Olive Oil 2 tbsp
  • Tomato Sauce 1 cup
  • Parmesan Cheese (to taste)
  • Parsley (to taste)

Steps

  1. Cut Shiitake Mushrooms (90g) into bite-sized pieces.
  2. Add a little Olive Oil to a frying pan and fry Bacon (70g) until crispy. (Key Tip!) Frying the bacon until crispy enhances its umami flavor.
  3. Once the bacon is colored, add the chopped Shiitake Mushrooms (90g) and stir-fry, allowing them to absorb the bacon's flavor.
  4. In a separate pot, start boiling Spaghetti (160g) for 1-2 minutes less than the package instructions.
  5. Once the shiitake mushrooms have absorbed the fat, remove from heat temporarily, add more Olive Oil, and sauté minced Garlic (1 clove) until fragrant.
  6. When the garlic turns golden, combine it with the fried bacon and shiitake mushrooms.
  7. Add a little pasta water to warm it up.
  8. Add Tomato Sauce (1 cup) and reduce the sauce.
  9. Add Tuna (1-2 cans) and wait for the pasta to finish cooking.
  10. Add the drained pasta to the sauce and toss quickly to combine.
  11. If needed, add salt and pasta water to adjust the taste.
  12. Turn off the heat, drizzle with Parmesan Cheese (to taste) and Olive Oil, and mix well.
  13. Serve on a plate and garnish with chopped Parsley (to taste) to complete the dish.
