A recreation of a classic Italian pasta dish using Japanese ingredients, Luigi's Spaghettini alla Carbonara. Featuring bacon, shiitake mushrooms, and tuna, this dish offers a nostalgic yet profound flavor. Enjoy this authentic, chef-recommended pasta easily at home.
Ingredients
Main Ingredients (2 servings)
- Spaghetti 160g
- Bacon 70g
- Shiitake Mushrooms 90g
- Tuna 1-2 cans
Seasonings
- Garlic 1 clove
- Olive Oil 2 tbsp
- Tomato Sauce 1 cup
- Parmesan Cheese (to taste)
- Parsley (to taste)
Steps
- Cut Shiitake Mushrooms (90g) into bite-sized pieces.
- Add a little Olive Oil to a frying pan and fry Bacon (70g) until crispy. (Key Tip!) Frying the bacon until crispy enhances its umami flavor.
- Once the bacon is colored, add the chopped Shiitake Mushrooms (90g) and stir-fry, allowing them to absorb the bacon's flavor.
- In a separate pot, start boiling Spaghetti (160g) for 1-2 minutes less than the package instructions.
- Once the shiitake mushrooms have absorbed the fat, remove from heat temporarily, add more Olive Oil, and sauté minced Garlic (1 clove) until fragrant.
- When the garlic turns golden, combine it with the fried bacon and shiitake mushrooms.
- Add a little pasta water to warm it up.
- Add Tomato Sauce (1 cup) and reduce the sauce.
- Add Tuna (1-2 cans) and wait for the pasta to finish cooking.
- Add the drained pasta to the sauce and toss quickly to combine.
- If needed, add salt and pasta water to adjust the taste.
- Turn off the heat, drizzle with Parmesan Cheese (to taste) and Olive Oil, and mix well.
- Serve on a plate and garnish with chopped Parsley (to taste) to complete the dish.
