A curry-flavored pork cutlet bowl packed with protein and vegetables. After marinating the pork and simmering the vegetables, the finishing touches can be done in a short time. Frying at low temperature and then a second fry makes it crispy, perfect for both rice and drinks. Try this hearty meal, ideal for recovering from fatigue and boosting stamina!

Ingredients

Main Ingredients (5 servings)

  • Pork shoulder loin 750g
  • Onion 2
  • Bell pepper 3
  • Eggs 5 (for seasoned eggs)
  • 1 beaten egg (for pork marinade)

Seasonings

  • [A] Salt, a pinch
  • [A] Pepper, a pinch
  • [A] Cooking Sake (Rice Wine) 3 tbsp
  • [A] Soy Sauce 3 tbsp
  • [A] Oyster Sauce 2 tbsp
  • [A] Curry Powder 1 tsp
  • Flour, as needed
  • [B] Mirin (Sweet Rice Wine) 3 tbsp
  • [B] Soy Sauce 3 tbsp
  • [B] Cooking Sake (Rice Wine) 3 tbsp
  • [C] Mirin (Sweet Rice Wine) & Soy Sauce, each to taste (1:1)
  • Water, as needed
  • Taibaku Sesame Oil, as needed
  • Finishing Sesame Oil, as needed
  • Frying oil, as needed
  • Cooked rice, as needed

Steps

  1. Cut the pork into bite-sized pieces.
  2. Slice the onions.
  3. Julienne the bell peppers.
  4. Season the pork with a pinch of salt and a pinch of pepper and mix.
  5. In a separate bowl, combine 3 tbsp Cooking Sake (Rice Wine), 3 tbsp Soy Sauce, 2 tbsp Oyster Sauce, 1 tsp Curry Powder, and 1 beaten egg, then mix.
  6. Add the prepared seasoning mixture to the pork and mix well until thoroughly combined. (Key Tip!) Rub the marinade into the pork thoroughly to ensure it's well-seasoned.
  7. Gradually add flour, as needed, to the pork and mix until a coating forms all over. (Key Tip!) The consistency should be such that the marinade liquid is just absorbed by the meat.
  8. Heat the frying oil to 160°C (320°F), add the pork, and fry slowly until lightly colored.
  9. Heat Taibaku Sesame Oil, as needed, in a frying pan and sauté the sliced onions until softened.
  10. Add 3 tbsp Mirin (Sweet Rice Wine), 3 tbsp Cooking Sake (Rice Wine), and 3 tbsp Soy Sauce to the onions and stir-fry.
  11. Add the julienned bell peppers.
  12. Add water, as needed, to cover the ingredients, cover with a lid, and simmer for about 5 minutes.
  13. Remove the lid, and once the liquid has reduced, drizzle with Finishing Sesame Oil, as needed, and mix to complete the vegetable topping.
  14. Increase the frying oil temperature to about 180°C (350°F) and double-fry the pork until crispy.
  15. Place cooked rice, as needed, in a serving bowl and top with the simmered vegetables and their sauce.
  16. Generously top with the freshly fried pork and serve with a seasoned egg to complete the dish.
