This is the 5th installment in our 'Rice Thief Series'. Instead of using the egg white, we marinate only the yolk in soy sauce and mirin for a rich and decadent egg over rice dish. An exquisite TKG is ready in no time!
Ingredients
Main Ingredients (1 egg yolk)
- Egg yolk 1 pc
- Cooked rice (to taste)
Seasonings
- [A] Soy Sauce 1 1/2 tsp
- [A] Mirin (Sweet Rice Wine) 1/2 tsp
Steps
- Choose a container for marinating the yolk that is just large enough to hold it. If making multiple, use separate containers to prevent them from breaking.
- Crack **1 egg** into a larger bowl, separate from the marinating container.
- If necessary, use chopsticks to remove any shell fragments or egg white from around the yolk.
- Gently scoop the yolk with clean hands, lightly shaking to remove excess egg white, and transfer only the yolk to the marinating container.
- In a separate bowl, combine **1/2 tsp Mirin (Sweet Rice Wine)** and **1 1/2 tsp Soy Sauce**, and gently shake to mix.
- Once the seasonings are combined, pour them over the yolk in its container, cover with plastic wrap, and store in the refrigerator.
- After marinating for 4 hours to 1 day, remove the soy-marinated yolk from the refrigerator and scoop out only the yolk with a spoon. **(This is the key!)** Marinating for 4 hours will flavor the surface, while marinating for 1 day will allow the flavor to penetrate the center, resulting in a richer taste. Marinating for more than 2 days can make the flavor too intense, so 4 hours to 1 day is recommended.
- Place the marinated yolk on warm rice and slightly mash it as you eat for an even more delicious experience.
