A healthy and surprisingly tender tofu hamburger made with tofu and ground chicken. With an air fryer, it's almost a hands-off dish. The sweet and savory teriyaki sauce is a perfect match, and this masterpiece can be customized with your favorite sauces.

Ingredients

Main Ingredients (2 servings)

  • Onion 1/4 (60g)
  • Tofu 150g (approx. 1/2 block)
  • Panko Breadcrumbs 3 tbsp
  • Ground Chicken 150g
  • Grated Daikon Radish (to taste)

Seasonings

  • Mayonnaise 1 tbsp
  • Soy Sauce 1 tsp
  • Grated Garlic 1 tsp
  • Grated Ginger 1 tsp
  • Salt and Pepper (to taste)
  • [A] Soy Sauce 1 tbsp
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Sugar 1 tsp
  • [B] Water 1 tbsp
  • [B] Potato Starch 1 tsp
  • (For dough adjustment) Potato Starch about 1 tbsp

Steps

  1. Finely chop 1/4 onion (60g) after peeling.
  2. Place the chopped onion in a microwave-safe container, cover with plastic wrap, and heat in a 600W microwave for 1 minute 30 seconds. Let cool.
  3. Put 150g of tofu in a bowl and mash into a paste using a whisk.
  4. Add 3 tbsp of panko breadcrumbs to the mashed tofu and mix. Let sit for about 5 minutes to soften.
  5. To the softened tofu and panko, add 150g of ground chicken, 1 tbsp of mayonnaise, 1 tsp of soy sauce, 1 tsp of grated garlic, 1 tsp of grated ginger, and a pinch of salt and pepper. Mix until sticky.
  6. Once the mixture is sticky, add the cooled chopped onion and mix. (Key Tip!) If the dough is too loose depending on the tofu's moisture content, gradually add potato starch while adjusting.
  7. After mixing the meat mixture, preheat the air fryer to 200 degrees Celsius (390 degrees Fahrenheit).
  8. Once preheated, remove the basket and shape the meat mixture into hamburger patties, then arrange them in the basket.
  9. Bake the hamburger patties in the preheated air fryer at 200 degrees Celsius (390 degrees Fahrenheit) for 20 minutes.
  10. Remove the baked hamburgers and any accompanying vegetables from the air fryer. Use a spatula or similar tool to carefully lift the hamburgers and place them on a plate.
  11. In a microwave-safe container for the sauce, combine 1 tbsp of soy sauce, 2 tbsp of mirin (sweet rice wine), and 1 tsp of sugar. Heat in a 600W microwave for 50 seconds.
  12. In a separate container, mix 1 tbsp of water with 1 tsp of potato starch to create a slurry. Add this to the warmed sauce mixture and stir.
  13. Reheat the sauce in the microwave again, stirring as needed until it thickens.
  14. Once thickened into a teriyaki sauce, generously pour it over the plated hamburgers.
  15. For extra flavor, garnish with grated daikon radish, a Japanese-style all-purpose sauce, or ponzu sauce as desired.
