Smashing broccoli and baking it with cheese, this is the trendy 'Smashed Broccoli' popular overseas. Without using any bacon or similar ingredients, this amazing recipe maximizes the umami of broccoli and cheese. With a tender, crumbly texture, even broccoli haters are sure to enjoy this dish.

- Broccoli 300g
- Butter 10g
- Pizza Cheese to taste
Seasonings
- [A] Water 1 tbsp
- [B] Ajishio (seasoned salt) to taste
- [B] Black Pepper to taste
- [B] Garlic Powder to taste
- [C] Majisco Hot Sauce to taste
- [D] Sesame Oil 1/2 tbsp
- [D] Salt 1 pinch
- [D] Kore! Uma!! Tsuyu (Japanese all-purpose seasoning) 1 and 1/2 tsp
Steps
- Separate 300g of broccoli into florets, peel the stems, and julienne them thinly.
- Place the separated broccoli florets and 1 tbsp water in a heat-resistant container, cover with plastic wrap, and heat in a 600W microwave for 6 minutes.
- Mash the heated broccoli with the bottom of a glass or similar utensil.
- Heat 1/2 tbsp sesame oil in a frying pan and thoroughly stir-fry the thinly julienned broccoli stems.
- Add 1 pinch salt and 1 and 1/2 tsp Kore! Uma!! Tsuyu and stir-fry together.
- Just before turning off the heat, add a small amount of sesame oil for aroma. This will be the stem namul.
- In a separate frying pan, add 10g butter and melt it.
- Once the butter is melted, add the mashed broccoli and press it down firmly with medium-high heat until fragrant and nicely browned. [Pro Tip!] While crunchy broccoli is good, steaming and mashing it until tender makes the texture incredibly delicious when browned.
- Once one side is browned, season with Ajishio (seasoned salt) to taste, garlic powder to taste, and black pepper to taste.
- Flip it over and lightly season the other side with Ajishio (seasoned salt), garlic powder, and black pepper.
- Sprinkle a generous amount of pizza cheese to taste over the entire surface, reduce heat to low, and cover.
- Once the cheese is melted, turn off the heat and plate it.
- For a change of flavor, drizzle with Majisco Hot Sauce if desired.
