These bite-sized sweet potato treats are crispy and caramel-coated on the outside, and fluffy on the inside. Simply cut, fry, and coat for an easy sweet potato snack recipe that's perfect for using up extra sweet potatoes. We'll show you two flavors: caramel and sesame. They're irresistibly delicious and incredibly easy to make!

Ingredients

Main Ingredients (2-3 servings)

  • 2 Sweet Potatoes (370g)
  • Frying Oil (for deep frying)

Seasonings

  • [A] 2 tbsp Granulated Sugar
  • [A] 1 tbsp Water
  • [B] 2 tbsp Sugar
  • [B] 1 tbsp Water
  • Pinch of Salt
  • 1/2 tsp Black Sesame Seeds

Steps

  1. Wash 2 Sweet Potatoes with their skins on and pat them dry.
  2. Trim the ends off the Sweet Potatoes and cut them into 1.5cm thick rounds.
  3. Cut the sliced Sweet Potatoes into 1.5cm cubes. Place the cut Sweet Potatoes in a bowl of water.
  4. Once all the Sweet Potatoes are cut, let them soak in water for 5 minutes.
  5. Drain the Sweet Potatoes and microwave them on high power (600W) for 2 minutes, covered loosely with plastic wrap. (Key Tip!) Partially cooking them in the microwave will shorten the frying time.
  6. Remove the plastic wrap, stir gently, and microwave again for 2 minutes, covered.
  7. Drain the microwaved Sweet Potatoes in a colander and thoroughly pat them dry with paper towels.
  8. Pour about 1cm of Frying Oil into a frying pan and heat over medium heat for 1.5 minutes.
  9. Add the Sweet Potatoes to the hot oil and fry over medium heat until they are crispy all over.
  10. Once they are crispy after about 7 minutes of frying, drain the oil and remove the sweet potatoes.
  11. To make the caramel flavor: Combine 2 tbsp Granulated Sugar and 1 tbsp Water in a frying pan and mix.
  12. Once the sugar and water are combined, heat over medium heat. Cook without stirring until it changes color.
  13. When the caramel starts to lightly color, lift and swirl the pan to ensure even coloring.
  14. Turn off the heat when a light caramel color is achieved.
  15. Add half of the fried Sweet Potatoes to the caramel and quickly toss to coat thoroughly.
  16. Once coated, add a pinch of Salt and mix.
  17. Spread them out on parchment paper, making sure they don't touch, and let them cool completely.
  18. To make the sesame flavor: In a separate frying pan, combine 2 tbsp Sugar and 1 tbsp Water and mix well.
  19. Once combined, heat over medium heat. Cook without stirring until it changes color.
  20. When it starts to lightly color, swirl the pan and turn off the heat.
  21. Add the remaining half of the fried Sweet Potatoes and 1/2 tsp Black Sesame Seeds, and toss well to coat.
  22. Similar to the caramel version, spread them on parchment paper and let cool. Once cooled, they are ready!
