This is a healthy corn and yam fritter that's as simple as mixing and baking. The sweetness and crunchy texture of fresh corn perfectly complement the fluffy texture of yam. Despite using minimal flour, it's impressively filling and incredibly easy to make.
Ingredients

- Corn on the cob 1 (approx. 150-180g)
- Yam 100g
- Egg 1
- Potato Starch 2 tbsp
Seasonings
- Dashi powder 1 tsp
- Butter 10g
Steps
- Peel the corn, leaving a thin layer of the husk intact.
- Dip the peeled corn in water, wrap it in plastic wrap, place on a heatproof dish, and microwave at 600W for 4 minutes.
- Cool the microwaved corn in cold water to stop the cooking, then carefully peel off the husk.
- Cut the peeled corn into 3-4 sections, stand them on a cutting board, and slice off the kernels. (If fresh corn is unavailable, you can use canned whole corn kernels in the same amount.)
- If the kernels from the sliced corn are clumped together, separate them with your fingertips.
- Peel 100g of yam.
- Place the peeled yam into a thick plastic bag and mash it with a rolling pin until it loses its shape. (This method allows you to mash the yam without getting your hands dirty.)
- Add 1 egg, 2 tbsp Potato Starch, and 1 tsp Dashi powder to the bag with the mashed yam. Close the bag and knead to combine.
- Add the separated corn kernels to the bag with the yam mixture. Close the bag and knead again. (This one-bag method allows you to mix all ingredients together, minimizing dishes.)
- Heat 10g of butter in a frying pan over medium heat until melted and spread evenly.
- Cut a corner off the bag containing the mixed batter and pipe it into a circle of approximately 20cm in diameter in the frying pan.
- Once the batter is in the pan, reduce heat to low, cover, and steam for about 5 minutes. (The fritter is done when small bubbles appear on the surface and it looks set. If it still seems too soft, continue cooking for a little longer.)
- If the bottom of the fritter is not browned enough, increase the heat to medium and continue to cook to achieve a golden-brown color.
- Once the bottom is golden brown, carefully slide the fritter onto a plate.
- Place the frying pan upside down over the fritter on the plate, then flip the plate and pan together to return the fritter to the frying pan.
- Use a spatula to reshape the fritter into a round form and cook the other side until golden brown.
- Once the second side is golden brown, turn off the heat and serve on a plate. (If you find it a bit bland, you can enjoy it with your favorite condiments like soy sauce or mentsuyu.)
