A classic Taiwanese dish featuring stir-fried somen noodles with a punch of ginger flavor. Simple ingredients, yet surprisingly delicious and perfect for a summer meal.

- Asparagus 3-4 stalks
- Somen Noodles 100g
- Ginger 20g
Seasonings
- Toasted Sesame Oil 2 tbsp
- Salt (to taste)
- Cooking Sake (Rice Wine) 1 tbsp +
Steps
- Wash the Asparagus and pat dry.
- Slice the Asparagus diagonally, making the base thinner and the tips thicker. This is the key! Adjust the thickness from the base to the tip so that the texture is uniform.
- Julienned the Ginger (20g) into strips about the same thickness as the somen noodles.
- Add the Toasted Sesame Oil (2 tbsp) to a frying pan, and add the julienned Ginger before the oil heats up.
- Stir-fry the Ginger over medium heat. Once it releases moisture and starts to sizzle, reduce to low heat. The key is to stir-fry the ginger slowly to prevent burning. Cooking it until it shrinks slightly will infuse the toasted sesame oil with plenty of ginger essence, bringing out its aroma.
- Add the sliced Asparagus to the frying pan with the stir-fried Ginger and cook.
- Add a pinch of Salt (to taste) to the stir-frying Asparagus and Ginger and mix well.
- While the Asparagus is stir-frying, simultaneously boil the Somen Noodles (100g). Drain the cooked Somen Noodles briefly.
- Add the drained Somen Noodles to the frying pan with the Asparagus and Ginger, and turn up the heat to high. Pour in the Cooking Sake (Rice Wine) (1 tbsp +).
- Stir-fry everything together until well combined. It's done!
