This is the ultimate yaki onigiri recipe devised by Mr. Ryuji. By carefully preparing the rice and mixing it with a special umami-rich sauce before grilling, you'll achieve delicious yaki onigiri that's crispy on the outside and fluffy on the inside.

Ingredients

Main Ingredients (4 pieces)

  • Rice 750g
  • Cooked Rice 400g
  • Bonito Powder 4g

Seasonings

  • Sake 2.5 tbsp
  • [A] MSG(Ajinomoto) 3 dashes
  • [B] Soy Sauce 2 tbsp
  • [B] Sugar 1 tsp
  • [B] MSG(Ajinomoto) 4 dashes

Steps

  1. Place Rice 750g in a bowl, rinse with running water, and discard the water once.
  2. Pour water again, gently rinse, and discard the cloudy water. Rinsing is complete after 2 times.
  3. Add Sake 2.5 tbsp and MSG(Ajinomoto) 3 dashes to the rinsed rice.
  4. Pour water up to the white rice line, and let it soak for 1 hour in the refrigerator.
  5. Put the soaked rice into a rice cooker and cook on quick cook mode.
  6. Once cooked, open the lid, mix the entire batch, then close the lid again and let it steam for a short while.
  7. Place Bonito Powder 4g, Soy Sauce 2 tbsp, Sugar 1 tsp, and MSG(Ajinomoto) 4 dashes into a heat-resistant container.
  8. Heat in the microwave without plastic wrap for 40-50 seconds. 【Tip!】 Heating reduces the soy sauce, making it easier to mix with the rice.
  9. Add warm Cooked Rice 400g to the heated sauce and mix well.
  10. Lay out plastic wrap, measure 100g of rice at a time, and shape it into a round ball. Make 4 of these.
  11. Heat a frying pan over medium heat, arrange the shaped onigiri and grill them. If the non-stick coating is peeling, line with parchment paper or add a small amount of oil. 【Tip!】 Creating traditional grill marks enhances the aroma and brings out the deliciousness.
  12. Once golden brown and crispy grill marks appear all over, arrange on a plate and serve.
