- Yellowtail fillets 3 slices
- All-purpose flour (for dusting) as needed

- Cooking Sake (Rice Wine) 1 tbsp
- Green onions (finely chopped) 3 tbsp
- Ginger (grated) 1 tsp
- Lemon zest (finely chopped) a little

- [A] Soy sauce 3 tbsp
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Vinegar 2 tbsp
- [A] Sugar 1 tsp
- [A] Sesame oil 2 tbsp
Steps
- Cut the yellowtail fillets into bite-sized pieces, about three per slice.
- Season the cut yellowtail with salt to taste and pepper to taste.
- Add 1 tbsp Cooking Sake (Rice Wine) and mix to coat.
- In a bowl, combine 3 tbsp finely chopped green onions, 1 tsp grated ginger, and a little finely chopped lemon zest.
- In a separate bowl, whisk together 1 tbsp lemon juice, 3 tbsp soy sauce, 1 tbsp Cooking Sake (Rice Wine), 2 tbsp vinegar, and 1 tsp sugar until well combined.
- Add 2 tbsp sesame oil to the mixed seasonings and stir to complete the Yurin sauce.
- Just before frying, coat the seasoned yellowtail evenly with all-purpose flour as needed.
- Heat about 1 cm of oil in a frying pan. Add the flour-coated yellowtail. Fry until golden brown all over, turning frequently. [Key Tip!] Using a small amount of oil and turning frequently allows the fish to cook through easily.
- Remove the fried yellowtail and place on paper towels to drain excess oil.
- Arrange lemon slices on a plate and place the fried yellowtail in the center.
- Drizzle the Yurin sauce over the yellowtail. Garnish with finely chopped lemon zest, if desired, to finish. Enjoy!
