Easily made in a single pan, these oil noodles are a delightful balance of refreshing zest and deep, rich flavor. The aromatic toppings and texture, finished with hot oil, are the key. Perfect for the upcoming season, you'll want to eat them again and again.
Ingredients

- 1/2 Onion
- 1 clove Ginger
- 1 clove Garlic
- 2 servings Chinese Noodles
- 2 Eggs
- Scallions (to taste)
Seasonings
- [A] Vegetable Oil 2-3 tbsp
- [A] Sugar 1/2 tbsp
- [A] Soy Sauce 4 tbsp
- [A] Vinegar 2 tbsp
- [A] Sesame Oil 1 tbsp
- Chili Oil (to taste)
- Coarsely Ground Black Pepper (to taste)
Steps
- Finely chop 1/2 onion.
- Place the chopped onion in a heatproof container.
- Finely chop 1 clove ginger.
- Add the chopped ginger to the heatproof container.
- Finely chop 1 clove garlic.
- Add the chopped garlic to the heatproof container.
- Heat 2-3 tbsp vegetable oil in a small frying pan until smoking hot.
- Carefully pour the hot vegetable oil over the onion, ginger, and garlic in the heatproof container, and mix quickly. [Key Tip!] Pouring the hot oil over the aromatics maximizes their fragrance and texture.
- To the oil-infused aromatics, add 1/2 tbsp sugar, 4 tbsp soy sauce, 2 tbsp vinegar, and 1 tbsp sesame oil. Mix well.
- Bring water to a boil in a frying pan.
- Add 2 servings of Chinese noodles to the boiling water and cook for about 5 minutes, stirring occasionally. [Key Tip!] Thick noodles are recommended.
- Drain the cooked noodles thoroughly in a colander.
- While the noodles are draining, gently crack 2 eggs into the side of the pot and make poached eggs by carefully gathering the whites.
- Place the drained noodles in a serving bowl. Lightly add some of the prepared sauce and mix quickly while hot to coat the noodles.
- Temporarily place the poached egg in a colander.
- Gently place the poached egg on top of the noodles.
- Generously sprinkle with scallions (to taste).
- Also add plenty of the onion from the sauce.
- Drizzle the remaining sauce over the top as an additional flavor boost.
- Add chili oil (to taste) and coarsely ground black pepper (to taste), if desired.
- Mix everything well before enjoying.
