Healthy croquettes made with broccoli instead of potatoes. The savory tuna and crispy coating are exquisite, and it's recommended for picky eaters. Perfect for bento boxes too!

Ingredients

Main Ingredients (2 servings)

  • 1/2 large broccoli crown (200g)
  • 1 egg
  • 1 can tuna (drained of oil and liquid)
  • 30g breadcrumbs
  • Breadcrumbs (for coating) (to taste)

Seasonings

  • 1 tsp granulated consommé
  • Pinch of salt

Steps

  1. Wash and separate 1/2 large broccoli crown (200g) into florets and stem.
  2. Finely chop the broccoli stems and place them in a heatproof bowl.
  3. Separate the broccoli florets into small pieces and add them to the heatproof bowl with the chopped stems.
  4. Cover the bowl with broccoli with plastic wrap and microwave on 600W for 5 minutes.
  5. Mash the microwaved broccoli until no longer in pieces using a fork or masher. If the stems are still tough, microwave for an additional minute.
  6. Add the drained 1 can of tuna, 30g of breadcrumbs, 1 tsp granulated consommé, pinch of salt, and half of the beaten 1 egg to the mashed broccoli. Mix until it comes together.
  7. Take the mixture and form it into balls about 3cm in diameter.
  8. Spread breadcrumbs (for coating) (to taste) on a plate or tray and finely crush them with your fingertips. This helps create a crispier texture.
  9. Dip the formed croquettes into the remaining beaten egg, then coat them evenly with the finely crushed breadcrumbs.
  10. Heat oil in a deep frying pan or pot over medium heat until a wooden chopstick sizzles when inserted.
  11. Once the oil is hot, carefully add the coated croquettes and fry until golden brown on all sides.
  12. Remove from oil and drain. Repeat with the remaining croquettes.
  13. Once drained, they are ready. Serve on a plate.
  14. Serve with your favorite condiments such as ketchup or mayonnaise.
