Ingredients
Main Ingredients (2-4 servings)
- Thinly sliced pork belly 150g
- Potato Starch generously
Seasonings
- [A] Soy Sauce 1 tbsp
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Grated Garlic 1 clove
- Vegetable Oil (for frying)
- Curry Powder (optional)
- Coarse Black Pepper (optional)
- Shichimi Togarashi (Japanese seven-spice blend) (optional)
Steps
- Cut the thinly sliced pork belly into bite-sized pieces.
- In a bowl, combine the cut pork belly, soy sauce (1 tbsp), cooking sake (rice wine) (1 tbsp), and grated garlic (1 clove). Mix well. Spread the meat out flat.
- Generously coat the pork with potato starch until it's completely covered and no meat is visible. Ensure each piece is coated evenly.
- Heat a generous amount of vegetable oil in a frying pan.
- Place the starch-coated pork pieces into the hot pan, ensuring they don't overlap.
- Press down firmly on the pork with a spatula while frying. Pressing down prevents the pork from curling and ensures a crispy texture. Fry until golden brown, similar to the color of a baked good.
- Once one side is golden brown, flip the pork and press down again with the spatula. Fry until the other side is also crispy.
- Remove the fried pork from the pan and place it on parchment paper to drain excess oil. Allowing it to cool in the air will further enhance its crispiness.
- Arrange the drained pork bites on a serving dish.
- Sprinkle with your favorite seasonings such as curry powder, coarse black pepper, or shichimi togarashi (Japanese seven-spice blend) to taste.
