Ingredients

  • Pea Shoots 1/2 bunch
  • Pork Slices 200g
  • Cooking Sake (Rice Wine) 2 tbsp
  • Potato Starch 2 tbsp

Seasonings

  • Chicken Bouillon Powder 1 tsp
  • Grated Garlic 1 tsp
  • Coarse Black Pepper (to taste)

Steps

  1. Trim the root ends of the pea shoots and thinly slice them into 1cm wide strips.
  2. In a bowl, add 200g of pork slices. Mix in 2 tbsp Potato Starch, 2 tbsp Cooking Sake (Rice Wine), 1 tsp Chicken Bouillon Powder, 1 tsp Grated Garlic, and a pinch of Coarse Black Pepper.
  3. Gently knead the seasonings into the pork slices, mixing thoroughly until well combined.
  4. Add the thinly sliced pea shoots to the bowl. Gently mix and combine them with the pork slices. (Key Tip!) Mixing gently will help the pea shoots wilt and bind everything together.
  5. Heat oil in a frying pan over medium heat.
  6. Take portions of the combined pea shoots and pork mixture into your hand, lightly squeeze, and shape them into flat circles before placing them in the hot frying pan. (Key Tip!) Squeezing them by hand helps them hold their shape beautifully.
  7. Pan-fry until a nice crispy brown crust forms.
  8. Flip the patties, cover the pan with a lid, and steam-fry over low-medium heat for 2.5 minutes.
  9. Once the other side is also browned and the pork is cooked through, they are ready. Transfer to a plate and serve.
