This 'Tofu Garlic' recipe by culinary researcher Ryuji transforms a ¥58 pack of tofu into something incredibly delicious. It's easy to make, perfect as a side dish with drinks, and offers a rich, satisfying flavor that Iekei ramen lovers will adore.
Ingredients
Main Ingredients (1-2 servings)
- Firm tofu 1 block (350g)
- Garlic chives 50g
- Garlic 3-4 cloves
- Lard 1 tbsp
Seasonings
- Water 150cc
- Chicken stock 1 and 1/2 tsp
- Hondashi (Japanese dashi powder) 1 and 1/2 tsp
- Salt 1 pinch
Steps
- Remove the root ends from 3-4 cloves of garlic.
- Roughly chop the garlic.
- Roughly chop 50g of garlic chives.
- Add 1 tbsp lard to a frying pan and stir-fry 1 block (350g) firm tofu. [Chef's Tip!] Stir-fry thoroughly until the moisture evaporates and the tofu becomes more absorbent.
- To the stir-fried tofu, add 150cc water, 1 and 1/2 tsp chicken stock, 1 and 1/2 tsp Hondashi (Japanese dashi powder), 1 pinch salt, and the chopped garlic, then bring to a boil.
- Add the chopped garlic chives and cook until done. [Chef's Tip!] Using fresh garlic provides an authentic aroma and flavor that cannot be achieved with tube garlic.
