Directly from the owner-chef of Ristorante Acquapazza, here's an ultimate easy pasta, Cartierella, that doesn't require a frying pan. With just garlic, chili peppers, olive oil, Pecorino cheese, and pasta, you'll create a surprisingly rich and authentic Italian dish. This delicious 'chauffeur style' pasta can be easily made in just one bowl, so please give it a try.

Ingredients

Main Ingredients (2 servings)

  • Spaghetti 200g
  • Garlic (a pinch)
  • Dried Chili Peppers 1-2 pieces
  • Pecorino Cheese 50g
  • Parsley (to taste)

Seasonings

  • Olive Oil 50g
  • Salt (to taste)

Steps

  1. Finely chop the garlic.
  2. Tear the dried chili peppers into small pieces.
  3. Roughly chop the parsley.
  4. Boil a generous amount of water in a pot and cook the Spaghetti (200g) according to the package directions (approximately 6 minutes 40 seconds).
  5. In a large bowl, combine Olive Oil (50g), minced Garlic (a pinch), the torn Dried Chili Peppers (1-2 pieces), and roughly chopped Parsley (to taste).
  6. Add the cooked spaghetti to the bowl, grate in the Pecorino Cheese (50g), and mix everything well.
  7. Gradually add some of the pasta cooking water while vigorously mixing to emulsify the cheese and oil. This is the key step! The cheese will melt from the heat, creating a thick and rich sauce.
  8. Taste and adjust seasoning with Salt (to taste), considering the saltiness of the pasta water and Pecorino cheese.
  9. Serve in a bowl. Your dish is complete.
