- Cooked Rice 250g
- Egg 1 pc
- Ham 30g
- Chopped Onion 1 tbsp
- Scallion 1/2 tbsp
Seasonings
- White Sesame Oil 2 tbsp
- Salt 1/2 tsp
- Pepper a pinch
- Soy Sauce a dash
Steps
- Spread 250g of freshly cooked rice on a plate and let it cool to room temperature. This is the key! Cooling the rice helps it become fluffy.
- Lightly beat 1 egg. Finely chop 30g of ham.
- Finely chop 1 tbsp of onion. Slice 1/2 tbsp of scallion into small rounds.
- Prepare the seasonings: 1/2 tsp salt, a pinch of pepper, and a dash of soy sauce.
- Heat 2 tbsp of white sesame oil in a frying pan over high heat until fully hot and seasoned.
- Pour the beaten 1 egg into the hot, seasoned frying pan.
- Once the egg is half-cooked, add the cooled 250g of cooked rice.
- Maintain medium heat and continuously stir-fry the rice using a ladle or spatula, alternating between gently pressing and mixing. This is the key! Gently pressing with the spatula while stir-frying helps the egg and rice bind together.
- Once the rice and egg are integrated and a pleasant eggy aroma is present, add 1/2 tsp salt and a pinch of pepper.
- Add the finely chopped 30g of ham and continue to stir-fry, mixing well.
- Stir-fry by tossing to ensure even heat distribution throughout.
- Once sufficiently stir-fried, add the chopped 1 tbsp of onion and the sliced 1/2 tbsp of scallion and mix everything together.
- Finish by drizzling in a dash of soy sauce, then turn the heat to high and stir-fry briefly to release the aroma. Serve immediately.
