Ingredients
Main Ingredients (1 serving)
- Instant Spicy Ramen 1 pack
- 2 beaten eggs
- Potato Starch 1 tsp
- Water 2 tsp
- Mitsuba (Japanese Parsley) 2-3 sprigs
- Scallions 2-3 stalks
- 1 thumb-sized piece of grated ginger
Seasonings
- [A] Soy Sauce 1 tbsp
- [A] Mirin (Sweet Rice Wine) 1 tbsp
- [B] Soy Sauce 1 tsp
- [B] Toasted Sesame Seeds 1 tsp
Steps
- Bring 550ml of water to a boil in a pot.
- Add the instant spicy ramen pack, the included spice sachet, and half of the powder soup to the boiling water. [Pro Tip!] Use only half of the powder soup and save the rest to adjust the spiciness or for other dishes.
- Add 1 tbsp of soy sauce and 1 tbsp of Mirin (Sweet Rice Wine) and simmer to let the noodles absorb the umami.
- Finely chop 2-3 sprigs of Mitsuba (Japanese Parsley) and 2-3 stalks of scallions.
- Mix the chopped Mitsuba and scallions with 1 thumb-sized piece of grated ginger, 1 tsp of soy sauce, and 1 tsp of toasted sesame seeds.
- Once the noodles are cooked, gradually add the potato starch dissolved in 2 tsp of water while stirring lightly to thicken the broth.
- On high heat, gently drizzle in the well-beaten 2 eggs and wait without stirring until the edges begin to set.
- Transfer the ramen to a bowl and generously top with the prepared savory sauce.
