- Beef (thinly sliced) 300g
- Maitake Mushrooms 1 pack
- Ginger 1/2 knob
Seasonings
- [A] Soy Sauce 2 tbsp + 2 tsp
- [A] Mirin (Sweet Rice Wine) 2 tbsp
- [A] Cooking Sake (Rice Wine) 4 tbsp
- [A] Sugar 2 tbsp
Steps
- Prepare the sauce mixture. In a bowl, combine Soy Sauce 2 tbsp + 2 tsp, Mirin (Sweet Rice Wine) 2 tbsp, Cooking Sake (Rice Wine) 4 tbsp, and Sugar 2 tbsp.
- Tear the Maitake Mushrooms 1 pack into large pieces by hand. (Key Tip!) They will shrink when cooked, so tearing them larger will result in a better texture.
- Thinly slice Ginger 1/2 knob. Stack a few slices and cut into thin matchsticks.
- In a pot, add enough water to cover the Beef (thinly sliced) 300g and bring to a boil.
- Once it comes to a boil, rinse the beef under water to remove any scum. (Key Tip!) Simmering the beef in water first helps to remove gamey odors and excess fat. The brown scum is a source of unpleasant smell and taste, so remove it carefully.
- In the cleaned pot, add the prepared sauce mixture and the julienned ginger, and bring to a simmer.
- Once boiling, add the rinsed beef and torn maitake mushrooms, and cook until the liquid has evaporated.
- The dish is complete when the meat is colored and the liquid has evaporated.
