  • Maitake Mushrooms 1 pack
  • Ginger 1/2 knob

Seasonings

  • [A] Soy Sauce 2 tbsp + 2 tsp
  • [A] Mirin (Sweet Rice Wine) 2 tbsp
  • [A] Cooking Sake (Rice Wine) 4 tbsp
  • [A] Sugar 2 tbsp

Steps

  1. Prepare the sauce mixture. In a bowl, combine Soy Sauce 2 tbsp + 2 tsp, Mirin (Sweet Rice Wine) 2 tbsp, Cooking Sake (Rice Wine) 4 tbsp, and Sugar 2 tbsp.
  2. Tear the Maitake Mushrooms 1 pack into large pieces by hand. (Key Tip!) They will shrink when cooked, so tearing them larger will result in a better texture.
  3. Thinly slice Ginger 1/2 knob. Stack a few slices and cut into thin matchsticks.
  4. In a pot, add enough water to cover the Beef (thinly sliced) 300g and bring to a boil.
  5. Once it comes to a boil, rinse the beef under water to remove any scum. (Key Tip!) Simmering the beef in water first helps to remove gamey odors and excess fat. The brown scum is a source of unpleasant smell and taste, so remove it carefully.
  6. In the cleaned pot, add the prepared sauce mixture and the julienned ginger, and bring to a simmer.
  7. Once boiling, add the rinsed beef and torn maitake mushrooms, and cook until the liquid has evaporated.
  8. The dish is complete when the meat is colored and the liquid has evaporated.
