Using an abundance of affordable enoki mushrooms, these Golden Enoki Mushroom Frys are pan-fried with egg and flour until fragrant. The crispy exterior and chewy interior are addictive, making this a healthy and budget-friendly dish. It's also perfect as a snack or for breakfast.
Ingredients
Main Ingredients (2 servings)
- Enoki mushrooms 1 bag (200g)
- All-purpose flour 2 tbsp
- Eggs 3
- Green part of scallions a little
Seasonings
- Salt and pepper 1/4 tsp
- Ketchup, as desired
Steps
- Crack 3 eggs into a bowl and mix well with 1/4 tsp salt and pepper.
- If desired, finely chop a little of the green part of scallions and mix into the egg mixture. (Key Tip!) This adds color and flavor.
- Trim 1cm off the base (stem end) of 1 bag (200g) of enoki mushrooms.
- Tear the enoki mushrooms into bite-sized portions while still in their bunch.
- Coat the torn enoki mushrooms with 2 tbsp of all-purpose flour.
- Place the enoki mushrooms and flour in a tray or large container, and shake to coat evenly.
- Heat oil in a frying pan over medium heat.
- Dip the floured enoki mushrooms into the egg mixture, ensuring they are well coated.
- Place the egg-coated enoki mushrooms into the heated frying pan, shaping them into a cohesive mass while cooking. (Key Tip!) Cooking them together makes them easier to eat.
- Once the bottom is golden brown, flip them over.
- They are done when both sides are cooked and the enoki mushrooms are tender.
- Wipe the frying pan clean, add more oil, and cook the remaining enoki mushrooms in the same way.
- If there is any egg mixture left, pour it over the enoki mushrooms as they are cooking.
- Serve with ketchup, if desired.
