Ingredients
Main Ingredients (Approx. 1L serving)
- Red Shiso 200g (leaves only)
- Water 1L
Seasonings
- Kibi Sugar 230g
- Apple Cider Vinegar 150ml
- Lemon Juice 30ml
Steps
- Separate the red shiso leaves from the stems.
- Wash the red shiso leaves in a bowl 2-3 times and drain well.
- Add 1L of water to a enamel or stainless steel pot and bring to a boil. [Key Tip!] Do not use aluminum pots as they may react with acid and discolor or leach metals.
- Add 200g of red shiso to the boiling water. Once it reboils, simmer for 5 minutes over medium-low heat.
- Turn off the heat, squeeze the red shiso thoroughly in a colander, and return the liquid to the pot.
- Bring the liquid back to a boil in the pot. Skim off any foam that rises to the surface.
- Turn off the heat and add 230g of kibi sugar, stirring until completely dissolved.
- Add 150ml of apple cider vinegar and mix well.
- Heat again until just before simmering around the edges of the pot, then turn off the heat.
- Stir in 30ml of lemon juice to finish.
- Let cool to room temperature, then pour into sterilized airtight containers and store in the refrigerator.
