A hearty soup using wonton wrappers as noodles, with potatoes and ground pork. This quick and easy recipe from Chef Wakiya's staff meal collection delivers an authentic taste.
Ingredients
Main Ingredients (1-2 servings)
- Potato 1.5 (approx. 200g)
- Ground Pork 50g
- Wonton Wrappers 10 sheets
- Green Onion (for garnish) (to taste)
Seasonings
- Cooking Sake (Rice Wine) 2 tbsp
- Water 500ml
- Salt 1+ tsp
- Pepper (to taste)
- Chicken Bouillon Powder 1 tsp
- Butter 1 tsp
Steps
- Finely slice 1.5 potatoes using a mandoline or grater.
- Thinly cut 10 wonton wrappers into approximately 5mm wide strips.
- Place 50g of ground pork in a frying pan and cook over medium-low heat.
- Once the ground pork changes color, add 2 tbsp of cooking sake (rice wine) and mix.
- Add 500ml of water and bring to a boil.
- Once boiling, add the sliced potatoes and mix well.
- Add 1+ tsp salt, pepper (to taste), and 1 tsp chicken bouillon powder to season.
- Simmer while skimming off any scum that rises to the surface, until the potatoes become translucent.
- Taste and add more pepper if needed.
- Once the potatoes are cooked, gradually add the cut wonton wrappers.
- Cook for about 2 minutes while stirring. Turn off the heat once the wonton wrappers become translucent and soft.
- Ladle into bowls and sprinkle with chopped green onion (to taste).
- Optionally, top with 1 tsp of butter. The melted butter adds even more depth of flavor.
