Steps
- Wash 2 potatoes (300g) and cut off the bottom by approx. 5mm and the top by approx. 2cm to stabilize. [This is the key!] New potatoes can be used with the skin on and will turn out fluffy when microwaved.
- On the top surface of the cut potatoes, make criss-cross cuts 1cm wide, leaving 2-3cm from the bottom. [This is the key!] Making cuts allows the mayonnaise to soak in, making them easier to cook and eat.
- Place the potatoes in a microwave-safe container, cover with plastic wrap, and microwave for 5.5 minutes on 600W.
- Place the microwaved potatoes in a bowl-shaped dish made from aluminum foil. [This is the key!] You can also bake and eat the cut ends for extra flavor.
- In a bowl, combine 1.5 tbsp mayonnaise and 1 tsp grated wasabi and mix well. [This is the key!] Adjust the amount of wasabi to your preference, or omit the wasabi and use salt and pepper for a child-friendly version.
- Spread the mixed wasabi mayonnaise into the cuts of the potatoes. Reserve a small amount for topping.
