Recreate restaurant-quality Shanghai Yakisoba in a flash, with no knife or cutting board needed! This recipe uses convenient pre-steamed noodles, bagged stir-fry vegetables, and canned corned beef for an incredibly easy and delicious dish. Pan-frying the noodles until crispy on both sides ('liang mian fan') adds a wonderful aroma, perfectly complementing the savory corned beef.

- Steamed Noodles 1 pack
- Mixed Vegetables 1 bag
- Corned Beef 1 can
Seasonings
- [A] Soy Sauce 1 tbsp
- [A] Sesame Oil 1 tbsp
- [B] Vegetable Oil 1 tsp
- [B] Soy Sauce 1 tbsp
- [B] Oyster Sauce 1 tbsp
- [B] Soup (or Water) 1 tbsp
- [B] White Pepper a pinch
- Sesame Oil 1 tbsp
Steps
- Loosen the **steamed noodles** and place them in a bowl.
- Add **1 tbsp Soy Sauce** and **1 tbsp Sesame Oil** to the loosened noodles and mix well.
- Cover and microwave on 600W for **2 to 3 minutes**. [Key Tip!] Microwaving ensures the noodles are heated through and absorb the flavors better.
- Empty the **mixed vegetables** from the bag and loosen the **corned beef** from the can.
- Heat a little **oil** in a frying pan and add the microwaved noodles.
- Flip the noodles and cook until browned on both sides.
- Once both sides of the noodles are browned, remove them from the pan and spread on paper towels. [Key Tip!] This step, called 'liang mian fan', adds a toasty aroma to the noodles.
- In the same frying pan used for the noodles, add the loosened **corned beef** (about 1 can) and stir-fry without adding oil.
- Once the corned beef is crumbly, add the **mixed vegetables** (1 bag) and stir-fry.
- When the vegetables start to soften, add **1 tsp Vegetable Oil**, **1 tbsp Soy Sauce**, **1 tbsp Oyster Sauce**, **1 tbsp Soup (or Water)**, and **a pinch of White Pepper**, and mix well.
- Return the browned noodles to the frying pan and mix everything together until well combined.
- Finally, drizzle in **1 tbsp Sesame Oil**, toss briefly, and it's done!
