This 'Chilled Tomato Pork Shabu-Shabu' is perfect for summer and can be made simply by boiling and mixing. Tender boiled pork is tossed with fresh, cold tomatoes and onions in a special sweet and sour soy sauce dressing. It's refreshing, delicious, and will keep you eating even on hot days.
Ingredients
Main Ingredients (2 servings)
- 1 Large Tomato (approx. 200g)
- 1/4 Onion (approx. 60g)
- 200g Thinly Sliced Pork
- Dried Parsley (optional)
Seasonings
- [A] 1 tbsp Cooking Sake (Rice Wine)
- [A] 1 tsp Salt
- [B] 1.5 tbsp Soy Sauce
- [B] 2 tsp Mirin (Sweet Rice Wine)
- [B] 2 tsp Vinegar
- [B] 2 tsp Sugar
- [B] 1 tbsp Olive Oil
Steps
- In a bowl, combine 1.5 tbsp Soy Sauce, 2 tsp Mirin (Sweet Rice Wine), 2 tsp Vinegar, 2 tsp Sugar, and 1 tbsp Olive Oil. Mix well.
- Cut 1 Large Tomato (approx. 200g) in half, remove the core, and chop into bite-sized pieces.
- Add the chopped tomatoes to the bowl with the prepared dressing and mix.
- Peel and thinly slice 1/4 Onion (approx. 60g).
- Spread the sliced onions on a plate or surface and let them sit in the air to mellow their pungency.
- Chill the mellowed onions and the tomatoes mixed with the dressing in the refrigerator.
- Add 1 tbsp Cooking Sake (Rice Wine) and 1 tsp Salt to 1L Boiling Water. (This is the secret!) Adding sake and salt removes the pork's gamey odor and adds a pleasant saltiness.
- Reduce heat to low and add 200g Thinly Sliced Pork to the hot water, separating the slices. (This is the secret!) Adding too much at once will lower the water temperature, so cook in batches.
- Gently stir the pork in the water and cook until the pink color disappears. (This is the secret!) Briefly simmering until the color changes ensures a moist and tender texture.
- Drain the cooked pork in a colander and allow it to cool down.
- Let the pork cool until it's no longer hot to the touch.
- Add the cooled pork to the bowl with the chilled tomatoes and dressing.
- Add the chilled mellowed onions to the bowl as well.
- Mix everything together thoroughly.
- Serve on a plate and sprinkle with Dried Parsley if desired.
