The second installment of Kou Kentetsu's 'Lazy-Style 10-Minute Bento' series! This time, we'll create two dishes in just 10 minutes: a Chicken & Sesame Tsukune Bento and a refreshing Grated Yam and Plum Dressing. You'll have a convenient and delicious bento box perfect for busy days.
Ingredients
Main Ingredients (1 serving)
- Ground chicken 150g
- Onion 1/8 (approx. 30g)
- Cooking Sake (Rice Wine) 1 tbsp
- Potato Starch 1 tbsp
- Vegetable Oil a little
- White sesame seeds 1/2 tbsp
- Shiso leaves as needed
- Japanese yam (Nagaimo) 30-40g
- Cooked rice as needed
Seasonings
- Salt a pinch
- [A] Soy sauce 1 tbsp
- [A] Cooking Sake (Rice Wine) 1 tbsp
- [A] Sugar 2 tsp
- [B] Umeboshi (pickled plum) 1
- [B] Soy sauce a little
Steps
- Finely chop 1/8 onion.
- Thinly slice 30-40g of Japanese yam.
- Place the sliced Japanese yam into a plastic bag.
- In a bowl, combine 150g of ground chicken and the chopped onion. Add a pinch of salt, 1 tbsp of Cooking Sake (Rice Wine), and 1 tbsp of Potato Starch and mix well.
- Heat a little Vegetable Oil in a frying pan and spread the tsukune mixture.
- Sprinkle 1/2 tbsp of white sesame seeds over the tsukune and shape it into a circle in the frying pan.
- Cover and steam-fry the tsukune.
- Pound the Japanese yam in the plastic bag with a rolling pin or similar tool until crushed.
- Add 1 umeboshi (pickled plum) and a little soy sauce to the bag with the crushed Japanese yam and mix well. (This is the key!) If desired, microwave the Japanese yam for about 1 minute before using.
- Flip the tsukune and cook the other side.
- Plate the cooked rice in the bento box.
- Once nicely browned, wipe off any excess oil with a paper towel.
- Cut the cooked tsukune into bite-sized pieces.
- Add 1 tbsp Soy Sauce, 1 tbsp Cooking Sake (Rice Wine), and 2 tsp Sugar (all marked as [A]) to the frying pan with the tsukune. Simmer while coating the tsukune to reduce the sauce.
- Lay some shiso leaves over the rice in the bento box.
- Arrange the sauced tsukune on top of the shiso leaves.
- Add the Japanese yam and plum dressing to the bento box. It's complete!
