  • Cooked Rice 250g
  • Egg 1
  • Citrus 30g
  • Ginger 2 tbsp

Seasonings

  • Citrus Juice 2 tsp
  • White Sesame Oil 1 tbsp
  • Salt (to taste)
  • Pepper (to taste)
  • Vinegar 2 tsp

Steps

  1. Peel the pith from the citrus and separate the segments by hand. Prepare 2 tsp Citrus Juice.
  2. Cut 2 tbsp Ginger slightly larger than rice grains and soak them in 2 tsp Vinegar until submerged. [This is the Key!] Soaking the ginger in vinegar enhances its refreshing flavor.
  3. Heat 1 tbsp White Sesame Oil in a frying pan and add 1 Egg, scrambling until half-cooked.
  4. Add 250g Cooked Rice to the half-cooked egg and stir-fry over medium heat, mixing the egg and rice together with a spatula until well combined.
  5. Once the rice and egg are integrated, season with Salt (to taste) and Pepper (to taste).
  6. Add the soaked 2 tbsp Ginger and 2 tsp Vinegar, and stir-fry over medium heat while mixing everything together.
  7. Drizzle a small amount of oil, add the separated 30g Citrus and 2 tsp Citrus Juice, and mix everything together with large motions to complete the dish.
